Another Recipe Post

Mother is still here with us but her doctors are very pleased with her progress. They are now saying as soon as the physical therapist gives us the OK, Mother can return to her house which motivates her even more because her independence is something of which Mother is quite proud.

I'm still coming up with recipes to try and working out some ideas for easy access snacks to keep in the fridge that fit into Mother's nutrition plan. I am finding that she prefers old standbys (modified, of course) more than anything but she has enjoyed a few of the new-to-us dishes.

Breakfast usually consists of whole wheat toast, Cream of Wheat, egg whites scrambled or as an omelet, and some fruit of avocado.



Yes, she eats small portions but that's ok. I bring her snacks in between meals. Most often, she wants the egg whites and toast OR Cream of Wheat and toast but putting it all together like the picture is too much.

Mother and Baby M both LOVE breakfast no matter what I prepare. Baby M is especially fond of my cheese eggs but they both think sweet potato toast with peanut butter and bananas for breakfast or snack is the greatest thing ever. It works better when I cut the sweet potato into little circles because they're easier to just pick up and pop into your mouth.



I tried a skillet lasagna recipe found HERE and made my own heart smart/diabetic friendly version. It was delicious but then, anytime I make zucchini lasagna it's delicious because- cheese.



I love how the top was a little bit crunchy with all that cheese! Oh. My. Goodness.

I am not a fan of ricotta cheese so I subbed in cottage cheese. I used egg whites instead of the egg, and avocado oil instead of olive oil. The avocado oil is something I'm trying out for the first time and we really like it. I find I do not have to use very much of it and the flavor is nice. I also chose a pasta sauce with only 3 grams of sugar. I was just not in the mood to make my own.

The recipe is not that much different from any other zucchini recipe I've used. It's not even that much different from my usual one. Except I do add a little splash of sherry to mine which tops just about anything off nicely.

BTW, we're are STILL awaiting the arrival of Baby R so if you picked a date earlier than today, you're in the boat with us and missed the mark. Anyone want a new guess? I know what he's going to do, he's going to wait until we exhale and relax a minute and then surprise us. Which means he's coming into the right family. Haha!

Am I Being Trendy Enough for Y'all?

I talk a lot about my grandmother's recipes and how even if you follow what she wrote down, yours won't be as good because she kept the real recipes in her head. Earlier this week I decided to make a quiche and brought out my old standby recipe. It isn't my grandmother's. My favorite quiche recipe was shared with me by my college bestie. She also shared my favorite cookie recipe with me. Every time I make the quiche or the cookies, I am transported back to one of the most fun times of my life.

I LOVE that my dear friend wrote the recipes down on cards in her handwriting. Who knew I'd be using them throughout the years to this very day? That I'd be raising four daughters on that spinach quiche and those delicious oatmeal chip cookies? That any of us would be responsible enough to raise children? LOL Yes, I have some pictures of us but I really don't think y'all want to see exactly how crazy we were back then.



Anyway, the cookies were her father's mother's recipe and that tells me why the cookies are so delicious! I've never made a grandmother recipe that I didn't love. Even my grandmother's recipes turn out pretty good even without knowing the secrets.



Here's the quiche. One of the reasons I love the recipe is that it is versatile. I don't love swiss cheese so I use my cheese of the moment and this time I changed the crust. I wanted to try a sweet potato crust because I had sweet potatoes and not a frozen crust and I don't make homemade crusts because when I do, they are awful. It worked!



"It's trendy, too!"

The same day I made the quiche I had the television on while Baby M was sleeping and Rachel Ray was on. I don't watch her show because she gets on my nerves by talking on top of people but there was a guy making something interesting so I watched for about 3 minutes. He poured a squash mixture in a bowl and mentioned eating color, and it was a beautiful shade of yellow, and then added quinoa when Rachel says, "It's trendy, too!" Ok, what's trendy? The quinoa? Wasn't that trendy a few years ago? Eating color? Hasn't that always been the idea? Good grief.

The word, trendy is also getting on my last nerve.

The word, trendy is also getting on my last nerve. I suppose that's a millennial thing but let me tell you something when the big technology breakdown comes millennials won't be able to deal because they seem to want to throw everything of the past away so they'll have no idea how to live without the instant gratification technology allows them. They also won't be able to access the latest fads (because isn't that really what trendy things are?) with a mere touch.

The trend-focused crowd does not take time to relate and share.

I'm not opposed to new thoughts/ways/ideas/trends but I see no good reason for tossing out all the old thoughts/ways/ideas/trends. I feel that's cutting off your nose to spite your face. The trend-focused crowd has no idea how to take the time to relate and share ideas. They get an idea and toss it right out if it doesn't work, throw it out there if it does, and move right along to the next idea. There is no perfection of an idea. There is no sharing. There is only moving through the days at the speed of light throwing ideas all over the place without once taking their eyes off their digital devices. Here's a thought: how long before they forget what human beings look like? Oh wait, they see humans on those digital devices. What was I thinking?

Trendy people seem to be drawn to fancy words instead of the food itself.

Back to the food... It's not that I never check out the new, 'trendy' recipes. But I will say this, healthy, organic eating is not new. It was the same kind of food my grandmother made because we weren't fighting against big pesticide companies and GMO corporations. We got our food from family farmers who farmed the way they were raised and this did not include pesticides or GMOs. Food used to come from the ground without the unhealthy additives. Plus, people used to cook every meal from scratch. That's the way I learned and it's what I did when the lovelies were growing up. It's what I do now. We've always made our meals colorful, this is not a new trend. Putting the name 'artisanal' in front of a word such as, butcher, does not change what it is. Putting multiple foods in a bowl is supposedly a new trend but I've seen this for YEARS and please ask anyone of the Asian culture how long bowl meals have been in existence. What I'm thinking is putting a fancy word behind another or renaming a dish with something sounding more clever is what the trenders are drawn towards. Brunch? Not new, y'all. None of this stuff is new it's just trendy. It's what they like right now. Trend = Fad. Anyway...

Cooking like Grandmother is not a trendy thing to do.

To go with the quiche I made grilled cheese but, instead of bread, I made bread out of zucchini (is that trendy enough to be considered trendy?). The 'bread' (trendy bread?) was like zucchini fritters and very good. I didn't follow the recipe to the letter because that's not what Grandmother did and I learned from her (not a trendy thing to do). I was going to make the two recipes at different times but couldn't decide which to make when and that's how we ended up with both for one meal.



I'm not trendy and I'm perfectly fine with that. 

Trendy or not, I eat what I want to eat. I prepare food the way I want to prepare it. I don't need a trendy word to make something more appealing. I'll enjoy preparing my home-grown food over a fire and not losing my mind over not being able to use my digital devices should the world ever come to that in my lifetime. I might also enjoy watching millennials run around not having a clue what to do.

Until then, life goes on in a whirlwind of technological development and e-waste destruction.

Oh, and I guess we can't use FB to abbreviate Facebook. Seems it stands for, Follow Back.

Smoothies and Sabotage

Another thing I've started doing every single day on my quest to health and fitness is drinking green smoothies!

Holy Cow! They are DE-FREAKING-LICIOUS! And I am totally ADDICTED!

I make a blender full each morning and drink it all down by the end of the day. So GOOD!

These delightful smoothies are a close second with the dry skin brushing as being my favorite new healthy practices.

These things are so tasty! It's like drinking thick juice! I like to have mine in, what the lovelies always called, a fancy glass. Did I mention that I am totally and completely 100% addicted to them?

I also wanted to mention sabotage- particularly as it relates to the weight loss part of my journey. I used to be really, really good at sabotaging myself.

I used to struggle with getting upset over the weight thing. It's SUCH A DARN SLOW PROCESS that I would get frustrated with myself. When I got frustrated, I would eat. And eat. My frustrations actually triggered my desire to eat. It became a battle. And the battles were many.

Oh and goodness me!  Let's NOT forget that annoying as hell little inner voice to whom we give permission to say things to us like: "Are you kidding?  This is too hard. Just stay the way you are. It's so much easier to leave well enough alone. Just one bite won't hurt anything..." It will even remind us from time to time that we don’t have what it takes to lose the weight or it's taking too long that it just isn't going to happen or consider your AGE...anything to make us believe losing weight is nothing less than an insurmountable obstacle.

And that's just what some of us do to ourselves.  It's a fight all the way to the finish whether we battle ourselves or others who are not exactly supportive. This time, I am determined to fight it all the way. I am way more stubborn that that annoying as hell inner voice of mine. I now frustrate my frustrations.

And give in to green smoothies instead.

Recipes

The first months of being gluten and sugar free required some research for some new recipes. And now that we are considering trying the RAW route for the summer months, I'm on a recipe hunt again.

After a time, it became much easier and, as I got the hang of things, I was able to take my old standby recipes and convert them to suit our new lifestyle eating habits.

The RAW foods are brand new to me but the recipes out there are in abundance! And easy! AND, I won't have to turn on the oven this summer when, instead of temps being hot, they'll be hotter. Which will lead to hotter than hell and then eventually turn into do-not-even-THINK-about-talking-to-me-because-it-is-too-damn-hot-and-you-WILL-draw-back-a-nub.

Wednesday night I tried a few newtome RAW recipes. The college crew LOVED it! (Gotta love having college kids over for new recipes- they'll eat just about anything AND make you feel good about preparing it for them!).

We had veggie roll-ups that looked like Sushi without the fish! Cause I'm NOT eating RAW fish. No. Anyway, they're wrapped in Nori- which is seaweed. 


And a spinach and arugula salad with strawberries and walnuts with a homemade dressing.


And, for dessert, mixed fresh, chopped fruit on Romaine lettuce. It was supposed to be rolled but I couldn't manage the rolling of the Romaine leaf. So it wasn't rolled. It was placed.


We also had some brown rice with roasted veggies just in case they needed more. And they did. But I forgot to take pictures of that.

Spring Chick Challenge Update: Week 6 and Scones Recipe

Time for the weekly update for the Spring Chick Challenge hosted by Stormy at Real Chicks Getting Fit.

Putting myself back on my timer eating schedule was useful in helping me keep those daily calories closer to 1200. But then I got sick of hearing the damn alarm go off six times/day. Sometimes, things just bother me and that's all there is to it! 


TRACKING: YES- every single day.
EATING AFTER 8:00 PM: YES
ORGANIZING: Gotta get WAY more serious on this one.
SUPPORTING OTHERS: I can always do better on this one.
DAILY WRITING: Yeppers!
WEIGHT: I am not stepping on the scales until the end of the month. The running/walking/training program I am on is for weight loss not for running a 5k. Right now, it's all about learning to run and weight loss. If I keep stepping on the scale and don't see immediate results, it will act as sabotage which will lead to frustration and, possibly, quitting. And I refuse to let that happen. HOWEVER, I will say that it is going well and I moved up to the next level last Friday! Which means it's back to hard again. Until it isn't. LOL

NEEDS IMPROVEMENT/WEEK 6 GOALS:
  1. Support and encouragement off others
  2. Get serious about making a daily schedule- I thrive on schedules and sit idle without them. Go figure. 
  3. The mini challenge is to eat on smaller plates and use smaller utensils. I already do this!

I had a request for the scones recipe so here it is:
(recipe is from Gluten-Free Baking Classics by Annalise G. Roberts and can be found on page 36...just click on the book to your left to find it on Amazon.)










TRADITIONAL SCONES

 1/2 cup milk
1/2 cup raisins (I was out of raisins so I used Trader Joe's dried cranberries)
2 cups brown rice flour mix*
1 TBS granulated sugar (I used Turbinado or coconut sugar---can't remember which)
1 TBS baking powder
1/4 tsp xanthan gum
1/2 tsp salt
5 TBS unsalted butter cut into small pieces
2 large eggs

*Brown rice flour mix: 2 parts brown rice flour (extra finely ground); 2/3 part potato starch (NOT potato flour); 1/3 part Tapioca flour (this recipe is found on page 6 of Annalise's book)
  1. Preheat oven to 425. Line heavy baking sheet with parchment paper (I just used gluten free cooking spray on a cookie sheet)
  2. Combine milk and raisins in glass measuring cup and set aside. 
  3. Combine flour, sugar, baking powder, xanthan gum, and salt in large bowl of electric mixer. With mixer on low, cut butter into flour mixture until it resembles a coarse meal. Put mixture into a small bowl and set aside.
  4. Beat eggs in the same large bowl of electric mixer until very large and foamy. Add milk and flour mixtures all at once, and mix at medium-low speed for 1 minute. Use lightly floured hands to pat out dough into a large, 1 inch thick round on lightly floured surface. Cut out scones with a 2 1/2 inch round cutter. Press dough scraps together and repeat.
  5. Place dough on prepared baking sheet and put in center of oven. Turn oven temperature down to 375 and bake 20-25 minutes until golden and cooked through. Serve with butter or preserves. (We used roll butter and local honey)

Winter and Gumbo: A Fantastic Combination

Old Man Winter has finally, FINALLY, made an appearance in the SC low-country! And strong winds came along for the ride. I mean SERIOUSLY strong winds. They blew our lawn chairs around the yard, limbs were down in some places and, when Hubs was out, it kept making noises at the front door that made me think someone was trying to come in! Luckily, Criminal Minds was not on last night!

I thought we were going to be like the house in The Wizard of Oz! 

And the winds were still here this morning when I walked Tucker. Not quite as strong- but cold. Cold enough that, when it hit my face, it felt like someone was popping me with rubber bands. Or a stapler. Ouch! That's the last time I go out without a scarf!

Yes, I asked for cold weather. And, yes, I love it. But sometimes I forget to go out dressed properly for it!

Anyway, I absolutely LOVE visiting Biz at My Bizzzy Kitchen because I can always count on her for a recipe or two, or 100, that are always, ALWAYS worth a try. And, just the other day, I found a gumbo recipe that sounded perfect for a cold Sunday afternoon.

We weren't disappointed! I changed a couple of things- I used Turkey andouille sausage and fresh low-country shrimp, olive oil instead of vegetable oil, gluten free flour and my own essence instead of Emeril's- BUT it was delish!

I made a fresh fruit salad to accompany the gumbo-I used an old southern secret for the sauce...anyone know what it is?


The fruit salad would have had fresh blueberries in it but they turned into gluten free muffins earlier this morning!

Chocolate/Peanut Buttery Goodness in a Ball

I had a couple requests for the chocolate peanut butter thingys I made for the kids Wednesday night.

Here it is:

Chocolate Peanut Butter Balls (recipe comes from Gluten-Free Baking Classics by Annalise Roberts, page129)

1/2 cup unsalted butter (I used organic, rolled butter)
18 oz smooth peanut butter (I used organic, unsalted, unsweetened)
3 1/2 cups confectioner's sugar (I used organic)
2 1/2 cups gluten free crispy rice cereal (Whole Foods carries this but you could probably use Rice Crispies)
16 oz semisweet chocolate, chopped (I used organic, unsweetened, dark)
  1. Mix butter, peanut butter, and sugar together in large mixing bowl of electric mixer. Beat until creamy.
  2. Add crispy rice cereal and mix until cereal is incorporated into dough. Chill until cold.
  3. Form into 1 inch balls (rolling them into balls is easier when dough has been chilled--supposedly...I still had a time with this) and refrigerate 12 hours (I put them in the freezer because I didn't have 12 hours)
  4. In a double boiler or microwave, melt chocolate and keep warm.
  5. Dip balls into warm chocolate. Place on wax paper to cool. Refrigerate until chocolate hardens. Store in refrigerator in airtight container. Serve at room temperature or slightly chilled. Best when eaten within 1 week. 
  6. Makes about 72
I served these with fresh strawberries and whipped cream and the flavors were fantastic together!

My Brilliance is Blinding

The lessons just never stop, do they? I suppose that's a good thing. I would hate to think that learning simply stops one day. But why am I so stubborn that I am just now learning some that would have benefited me YEARS ago have some evaded me until I hit my 50s?

And then there's the fact that I'm still not practicing some of the lessons--apparently one lesson is that learning a lesson is not the same as applying the lesson.

Some of you may know what I'm talking about. Others of you may be members of the group of people who already know everything and do all things right all the time. Good for you.

I've learned that it's important to 'gowiththeflow' especially if you have kids. And to listen to my woman's intuition. I've learned that I don't have to control every single thing in life. And that men are going to act like teenage boys their entire lives.

Then there are lessons like the grand ideas that pop into our heads and we get so excited and get started and THEN realize that, although the idea was a good one, the time that is involved is ridiculous and there's either no time to finish or it becomes all consuming. Yeah. That's the annoying lesson of today.

One of the gifts I gave each of the lovelies for Christmas was a scrap/cookbook. They are just so cute. I found them at the store where I always spend way too much money, I swear it's like I go into a stupor when I walk through the door Michael's and decided to fill them with all our family recipes and the new ones that I have discovered from our healthier diets--all the gluten free tips, and sugar free substitutions, etc. I am also including basic cooking tips--at the bottom of the traditional recipes, I am writing about how to make the dish healthier. Some pages will even have step by step instructions because not all the lovelies know their way around a kitchen (coughBreezycough and coughcrunchyricearoniDeaniecough)

I wondered if I could use the MyMemories software to make the cards and some of the pages (not all the pages because I want to hand-write some of them). So, I am making these:

Yes, I have discovered that this brilliant idea has turned into a major pain in the ass project of the time consuming type. I have also discovered that we have about 20 bazillion recipes and that writing every single step from how to put water in the pot to how to take the food out of the pot is CRAZY.

But I also realize that when we do something like this for our children, it will be so worth it. When I'm no longer here, they will look at their mom-made cookbooks and remember so many wonderful kitchen/cooking/baking/eating family times. They'll laugh over the little mom-liners that I've included on some of the cards/pages and they'll share their memories with each other and their own children and husbands.

Not to mention the fact that I am enjoying my own walk down memory lane as I go through the family recipes and remember my childhood times in the kitchen with my grandmother, mother, and aunt.

So, is it taking a freaking crap ton of time? Yep. Do I ever wish I'd stop having all this all consuming projects? Yep. Will I stop? Nope.

It's for the kids. And when it's for the kids, we moms just do it.

Veggie Burgers and Grandmothers

Both of my grandmothers were incredible cooks. Absolutely incredible. Some of my most cherished memories are those spent with these amazing cooks in their kitchens while they prepared delightfully delectable dishes. There was never a time at either house that we left feeling less than completely satisfied and loved.

Not a single one of us can duplicate even the simplest of their sinfully delicious kitchen creations. And we have tried. Multiple times. Countless times. It simply cannot be done. And there is a very good reason for our failure. Neither of these accomplished cooks used such trite kitchen tools as measuring cups.

My mother once asked my grandmother how to make the pudding part of her banana pudding. Here it is:

Amount of sugar you think it needs
Add milk ‘till it tastes right
Add flour ‘till its thick enough
Start with 2 egg yolks; add more if needed
You can put vanilla in it but you don’t have to
 
This is all leading up to the explanation of why I can only give out the ingredients I used for those VEGGIE BURGERS I made this week. It's not that I don't want y'all to have it. It's that I cook just like my grandmothers did. I rarely, if ever, measure. I change most recipes that I do follow- adding or changing or taking out ingredients here and there. If I were to attend cooking school, I'm certain they would kick me out after one day.

That being said, here are the ingredients I used for the veggie burgers.

shredded carrots
shredded zucchini
a handful or two of mixed baby greens
chopped onion
1 can Garbanzo beans (chick peas)
oats (some I ground up in the food processor to a floury consistency, some I kept whole) [Next time I will use coconut flour and whole oats]
egg whites
various seasonings (this one is easy though- just add what your family likes)

I will mention that, once I had it all mixed up, I thought it was a tiny bit wet so I added some more oats. Next time, I will leave those extra oats out. I think they would have been even better had the mixture remained wet- but dry enough to stay together in a patty.

Then I simply baked them in the oven on 400 degrees. Don't remember how long but I did turn them over so they could brown a bit on both sides.

Sorry y'all. BUT here's some good news! For those of you who asked for the Zucchini Lasagna recipe, I can lead you to the one I used as a guideline:  my Zucchini Lasagna is based on Debbi's here. She also has a recipe for Tomato Zucchini Bisque that really is to die for! I follow the bisque recipe almost to the letter. It's so amazing!

As a matter of fact, Debbi has an entire index of recipes that she has modified for lower calories and calculated the nutritional value for her readers. I am using quite a number of her recipes as a guideline for the Slimmer this Summer Challenge! Check her out! 

AND maybe, if we're lucky, Patrice at Everyday Ruralty will share her Ratatouille recipe with us! She's a professional chef you know! (And mom to four daughters, wife of a farmer, friend extraordinaire, owner of Wendell the wonder horse...).
