The New Vet and Garden Update

Yesterday was Tucker's first visit from the new vet. She was fantastic!

And not just because she was knowledgeable but she's just a very nice person. She began her own lifestyle change in an effort to get herself healthy (sound familiar?) and decided that there was a healthier way for pets as well. I'm so grateful that she did.

Of course I forgot to take pictures while she was here (even though I put it right on the table so I would remember) because I was so interested in what she had to say. So, I stole borrowed this one from her website. Just click the picture and go visit her site!

AND, she comes to your house! That's right. AND the cost is WAY less than the traditional vet we were using. It's not that I didn't like our vet. But, there are 5 of them in that office and about 10+ techs. And then there's that unnecessary renovation they need their clients to help pay for so- I was paying for an overstaffed newly decorated office. And lots of vaccinations that I don't believe Tucker needed.

I much prefer the personalized care that Tucker will get from Dr. Oldham. I much prefer her holistic approach to pet care. And I would stick with her even if her fees were more than the traditional vet. Dr. Oldham is worth it!

Besides, Tucker and Stider LOVED her!

Meanwhile, out in the garden----

The sunflowers are blooming-can you tell that this one towers over my head?

I just love sunflowers!

And cherry tomatoes---

These are some of the tomatoes I am going to can when they ripen...

But the cherry tomatoes get popped into our mouths right off the vine---

Thanks so much to everyone for the canning advice---

hints---

and tips!

Happy Thursday y'all! I'll meet you in the garden!

Does Anyone Out There Know How to do THIS?

HELP!
I need a website or video or SOMETHING that shows me (step by step with the assumption that I do indeed need the proverbial picture drawn) how to can my tomatoes without using a pressure cooker--I'm scared to death of those things because I don't like the loud noise an explosion makes. Or an explosion itself.

I have heard that one can use a hot water bath (WTH?) instead of the pressure cooker which sounds much safer.

Let's assume that I am 5 years old and trying to do this. Those are the kind of instructions I need.

Oh, and one for pickles too- the cucumbers are going CRAZY!

Whatever/however, I need to be able to apply the KISS principle to this process.

So, yeah. Does anyone have anything like that?

(Just click on the pictures to see where I found them! Oh, except the lady with the question marks- that's one I have via a subscription.)

Garden Goodness

I'm trying a few Gerson recipes before my July 1 experiment begins just to...just because...well, because I'm jumping the gun. As usual.

I tried the Zucchini and Potato Bake last week. It was delicious! I served broccoli burgers with it- not a Gerson recipe but so good! I had to more than double the recipes to feed the gang!

The veggies were not from my garden but they were all local and organic-

Once the veggies are prepared, it's time to layer--

The broccoli burgers were a cinch-- just process--

then form patties and bake--

Viola!

Now, from my backyard garden---GREEN TOMATOES--

from which I prepared---

FRIED GREEN TOMATOES!

A family favorite around here! And yes, it is a movie. But in the south, it's also a scrumptious side dish! I served these with string beans (from the garden) and potatoes, and grilled flounder fillets AND totally forgot to take a picture of the meal! For those of you who count calories, as far as I can tell, one friend green tomato had about 74 calories in it. Well worth it too! And I'm not telling you how many I ate. Sigh.

I don't have the recipe for the fried green tomatoes because it's one of those recipes that I just do- I don't follow a written recipe.

However, here are the recipes for the casserole and the burgers!

Zucchini and Potato Bake (2 servings)
(this recipe came from Healing the Gerson Way)

1 lb zucchini
1 lb potatoes
2 medium onions
2 cloves garlic
10 oz yogurt (I didn't use the yogurt because I thought I had plain but it was vanilla..oops)

Finely slice zucchini, potatoes and onions. Place alternate layers of each in casserole dish, adding a sprinkling of crushed garlic between layers. Cook in oven at 350 degrees for about an hour and a half. Add second garlic clove to yogurt. When dish is cooked, spread yogurt on top.

Broccoli Burgers (makes 4 burgers)
(this recipe came from One Green Planet)

Ingredients:

1/3 cup dry couscous (I used brown rice because I forgot to buy couscous)
1 cup water
1 1/2 cups broccoli florets
2 tsp olive oil
1/2 cup chopped scallions
1/2 cup chopped yellow onion (I used a vidalia onion)
2 tsp ground cumin (Ick...I skipped this ingredient)
1- 15 oz can chickpeas, rinsed and drained
1 TBS sesame tahini (I didn't use this because do you know how much tahini sauce cost??????)
1/2 cup panko bread crumbs (don't like panko, used my gluten free bread crumbs)

There is Tahini Dressing for the burger, which I didn't make, but here's that part:

1/3 cup sesame tahini
1/3 cup water
1/4 cup plus 1 TBS fresh lemon juice
2 garlic cloves, chopped
3/4 tsp sea salt

Directions:

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a small pot, bring the water and couscous to a boil. (I skipped these 3 steps because I just made some brown rice and used that)
  • Remove from heat immediately and allow the couscous to sit in the pot for 10 minutes to soak up the water.
  • Steam the broccoli in a steamer for 5-7 minutes
  • In a skillet, heat the olive oil over medium heat and add in the onion and scallions, stirring occasionally for 3-5 minutes until the onion softens.
  • Remove the onions from the heat and stir in the cumin.
  • Place couscous, broccoli, onion mix, chickpeas and sesame tahini in a food processor and combine.
  • Pour the mixture into a bowl and stir in the bread crumbs.
  • Form it into patties and place the patties on a cookie sheet--I sprayed a little organic olive oil on the pan.
  • Bake for 50 minutes, turning the patties over halfway through. You’ll know they are done when the tops begin to brown.
  • To make the tahini sauce, place all ingredients in a food processor and blend until combined, for about 30 seconds.
  • Top your burgers with the sauce and anything else you like on a burger and ENJOY!
I have discovered a website called Calorie Count that is good for determining the caloric value of recipes. Using the site, the zucchini/potato bake has about 241 calories per serving and the burgers have about 161 WITHOUT the sauce.

How Does Your Garden Grow?

The garden is coming along nicely what with all this rain we've been having. You won't see any pictures of the squash and zucchini because all those plants died again this year. I don't know WTH I'm doing wrong there but this is the third year in a row this has happened. There are no pix of the spinach and Romaine lettuce because we ate all of it and it's all done. You also won't see any pictures of the cucumbers or pumpkin plants because I forgot to take pictures of those- my really nice neighbor was outside and I was distracted talking with her. and the sunflowers haven't bloomed yet though something is really eating up their leaves- dang it. It's a good thing we love tomatoes.

DoodleBug and I LOVE cherry tomatoes--

and 'regular' tomatoes----

but cherry tomatoes are our favorites---

I'm just really glad to see all the tomatoes are coming along nicely---

the green beans are doing well this year too--

so is the red lettuce...

I have some flowers planted in between some of the veggies like nasturtiums---

these are RED! I thought they were dahlias but now I'm not so sure...(anyone know?)---

anyway... you can never have too many cherry tomatoes!

Garden Play

The garden is coming along. So far, everything is growing instead of dying. This is a good sign.

I've been playing around in it every day since I began prepping the areas in the yard in March.

I planted squash, green beans, blue pumpkins, tomatoes, cucumbers, rosemary, sunflowers, black-eyed susans, and cosmos--some of which I must take a moment to say "Thank-You" to Kim at My Field of Dreams.

The raised beds contain my leafy greens- spinach, red lettuce, romaine, tomatoes, green beans and the same flowers.

My bird bath was too deep for the little birds so I had the husband drill holes in the bottom so I could plant flowers in it and put a smaller birdbath in the middle on a pedestal.

I also made a little flower garden between the two bird feeder poles and the bird bath.

I just love color in the garden!

And the birds? The LOVE the new birdbath set up!
